Coconut ice cream sundae

This is simply delicious!  Yes I say that about anything that truly is.  I used left over coconuts. (There were a prop.  After I drank the water inside.  (Which tastes nothing like that stuff in the store!) I used them as bowels.  The meat on the inside can be shaved and quickly pan seared.  Making coconut bacon.  Another recipe for another day)
Once the coconut is cracked.  Put in one or two scoops of the ice cream. I chose coconut ice cream of course.  With chocolate and coconut caramel.  I wrote an article on this a while back, (http://myendometriosisdiary.blogspot.com/2015/02/ice-cream-review-dairy-soy-and-gluten.html). 
The ice cream paired perfectly with the coconut as a bowl.  Which also is perfect for portion controlled sizes.  Then I topped it with coconut crisps... Featured by dang.  Using coconuts as bowls makes a great conversation desert for any gathering.  Making any ice cream exotically appealing.  To all ages.  Enjoy!

Curry Lobster & Black Rice recipe

Hey everyone.  As you all know.  I pretty much eat like an island gal.  Too much seafood and fruit!  I can't get enough of it!  Today I decided to make curry lobster.  I normally make this without the ️coconut milk.  However,  now that I added the canned coconut milk.  I won't have it any other way.    Simply delicious!  Quick and easy too!  This makes about two-three servings.  It can easily be modified to accomodate more people.  Also I made my own curry powder, because I am avoiding certain ingredients.  Such as fennel, and onion.  Feel free to add them to yours if you like.  
You'll need: 
๐Ÿ”ธof course pots and pans
Ingredients:
๐Ÿ”ธ2 Lobster tails
๐Ÿ”ธ1 tbsp of olive oil
๐Ÿ”ธ1/4 cup canned coconut milk (place in another container and store the rest in the fridge.  Also, canned for the thick consistency.)
๐Ÿ”ธblack rice ( you can use whichever your preference is. I enjoy the flavor of black rice)
๐Ÿ”ธ1/4 tsp black pepper
๐Ÿ”ธ1/4 tsp of turmeric
๐Ÿ”ธ1/4 tsp of ginger (fresh or ground)
๐Ÿ”ธ1/2 tbsp of garlic (fresh, minced, or ground) 
๐Ÿ”ธ1/2 tsp of turmeric
๐Ÿ”ธ3/4 tsp of Himalayan pink salt ( or the salt of your choice. Pink salt or sea salt is healthier)
๐Ÿ”ธ1/4 tsp of paprika 

Directions:
First boil water for rice and/or start boiling rice.  Since black rice takes a while, I cooked mines prior to the lobster.  Amount and quantity again, depends on your preference.  Once the rice is started.  Begin cracking lobster, and/or preparing it.  I took them out of the shell.  Then I diced it into small pieces.  Next pour in the olive oil, let the skillet get warm.  Then place in the lobster in the skillet, and add in herbs, and coconut milk.  Let cook for 5 mins.  Once it's done, add in the salt.  Now, check your rice.  Add in the same herbs to the rice.  All except for the turmeric and paprika.  This is a quick, easy, and healthy meal.  Plate the dish and enjoy! 


Don't mind my dogs sad face.  He's upset because he knows I'm not giving him any curried lobster! Lol he loves seafood!

How I sleep w/ endometriosis

Having any chronic illness can affect our sleeping habits.  Women like myself, who have endometriosis experince many issues in and out of the bed.  Sleeping can be hard to come by.  Depending on how you sleep.  Personally, the actual bed can be the best quality.  Yet, if my body isn't comfortable, then I have a rough night ahead of me. After multiple surgeries, in a short amount of time, sleep wasn't easy.  
experimented with different mattresses and pillows. While paying attention to what position helps me to fall asleep, and how I wake up.  In order for me to fall asleep, I need comfort.  A lot of it.  
I noticed that I felt more at ease, if I slept on my side.  However, I needed a pillow between my knees, and one behind my back for support.  In the midst I was gifted a body pillow.  It changed my life.  It's similar to amaternity pillow.  Since I experience pain in my pelvis, the pillow gave me similar relief.  Plus a better nights sleep.  I don't know how I was able to rest prior to having this pillow.  Getting the proper sleep helped me heal.  I am forever grateful..
